First and foremost as Restaurant Director you must have excellent contact with the guests, this is key to the success of this appointment, with an enviable gravitas that you were born with. You will be the face of the business for this very important role and effectively become one of the main attractions, as well as the sublime food and whole culinary experience that the guests come from far and wide to sample.
We need someone who is fast paced and of a high calibre, has natural gravitas, someone who has an exemplary eye for detail and knows what Michelin star food and service looks like and what the guests expect. With the team of 12 relatively young members we need someone who is a strong leader and can instil a sense of pride in all that they do.
With this being my client's home, we need effectively someone good enough to act as their business partner, valuing the place as if it were their own home. My client is very straight talking, a proper chef, so we need someone who can handle an owner operator whose standards and expectations are second to none.
We need someone who is extra flexible and understands that you would be working for an institution with an enviable reputation built up over 20 years, so we are looking for someone to take on this role seriously for a sustained period of time.
Above all this person needs to bring strong experience with them, ideally within Michelin star world but not necessarily, as long as your standards are high enough and you possess the hunger to be moulded to the 2 Michelin Star way.
