To support this next phase, we’re reshaping our kitchen and Front of House leadership teams, and we’re looking for a talented Sous Chef to support our Head Chef in delivering exceptional food and experiences. As Sous Chef, you will be the right-hand to the Head Chef, helping to lead the kitchen team, maintain high standards, and deliver dishes consistently and efficiently. You’ll take ownership of daily kitchen operations, support menu execution, and ensure that every guest enjoys an outstanding culinary experience. This is a hands-on, leadership role, requiring someone who can inspire the team, manage pressure, and contribute to a positive, high-performing kitchen culture.
What You’ll Be Doing
- Support the Head Chef in leading, motivating, and developing the kitchen team
- Assist in menu execution, specials, and seasonal dishes
- Ensure consistent, high-quality food delivery aligned to Fistral’s new concept
- Manage daily kitchen operations including prep, mise en place, and service flow
- Maintain compliance with food safety, health & safety, and HACCP standards
- Support stock control, ordering, and supplier management
- Coach and mentor junior chefs, fostering a positive and inclusive team environment
- Help drive operational efficiency, productivity, and cost control
- Step in for the Head Chef when required, maintaining standards and consistency
What We’re Looking For
- Proven experience as a Sous Chef or senior kitchen role in a quality-led hospitality business
- Passion for food, drink, and delivering excellent guest experiences
- Strong leadership, mentoring, and team development skills
- Commercial awareness including understanding of GP, labour, and kitchen performance
- Calm, organised, and confident under pressure
- Hands-on approach with a willingness to lead by example
- Commitment to building inclusive, engaged, and high-performing teams
- Enthusiasm for contributing to the growth and evolution of Fistral’s new concept
