Full-time Permanent Entry Level Description

Full Time, 36-48 Hours Per Week Primarily Night Shifts, with flexibility for occasional day shifts

£24,000 - £31,000+ depending on experience, skill level and what you bring to the team.

This role is all about bread. We’re not looking for someone who has simply baked off frozen products or worked in a supermarket bakery. We’re looking for a genuine artisan baker. Someone who lives and breathes sourdough, fermentation, shaping, scoring and baking. Someone who gets excited about crumb structure, hydration levels, long ferments and producing exceptional bread every single day. If you love creating outstanding sourdoughs, baguettes, focaccia and artisan breads from scratch, we would love to hear from you.

Experience with laminated pastry and viennoiserie would be a huge advantage, but bread is our priority.

What You’ll Be Doing

  • Mixing, fermenting, shaping and baking artisan sourdoughs, baguettes, focaccia and speciality breads.
  • Managing fermentation schedules and dough development.
  • Producing consistently exceptional products every day.
  • Assisting with croissants, Danish pastries and other laminated products where required.
  • Maintaining high standards of organisation, cleanliness and food safety.
  • Working closely with the wider bakery team to ensure smooth production.

What We’re Looking For

  • Proven artisan bread baking experience is essential.
  • Strong understanding of sourdough fermentation and bread production.
  • Experience hand shaping and baking artisan breads from scratch.
  • Pride in quality and consistency.
  • Ability to work independently and manage overnight production.
  • Positive attitude and desire to continually improve.
  • Experience with laminated pastry would be a major bonus.
