LOST IN THE LANES, the award-winning contemporary restaurant in Brighton’s lanes, is seeking an experienced Senior Chef to work with us for the summer season (and perhaps beyond!). The role is predominantly daytime and will involve managing breakfast and lunch services as well as supporting our team of 8 eager kitchen members. A few evening shifts will be required to cover holidays. If you are passionate about producing seasonal food from local producers, thrive in a bustling kitchen, and have a proven track record of working in a similar restaurant at minimum level of senior CDP/Junior Sous then LOST would love to hear from you.

This Role Includes

The ideal candidate will thrive in a fast-paced environment and enjoy helping the team to maintain the highest standards of food quality, safety and hygiene systems, processes, planning, inventory management, procurement and staff training, ensuring a motivated and efficient team that deliver on exceptional food throughout the summer months.

  • KEY RESPONSIBILITIES:
  • Flexible & Fun – be able to work effectively under pressure in a friendly but fast-paced environment.
  • Manage a section efficiently, including sometimes the pass in lieu of a more senior team member. Full training will be offered on all sections!
  • Continue to train and support more junior team members.
  • Control Quality – ensure all dishes are prepared to the highest standards of quality and consistency, maintaining our reputation for beautiful breakfast, award-winning lunch and seasonal evening menus.
  • Manage Inventory: order supplies and manage food wastage.
  • Health and Safety – ensure all kitchen activities comply with food safety regulations and health standards, conducting regular checks and training sessions for the team.

Skills Required

QUALIFICATIONS: 3+ years min experience running your own section and some management of staff members is a real advantage. A passion and knowledge of food and bold flavours as well as a strong eye for detail.

BENEFITS: Predominantly daytime hours with a friendly team in central Brighton. Very competitive salary based on experience. Part time and full time both considered. This role will ideally start asap (but we are flexible on start time). Full support and training will be given to you by our long serving team members!
