You are responsible for the sourcing, preparation, display and sale of fresh fish and shellfish. The role combines technical knife skills with expert product knowledge to process raw seafood and provide high-quality customer service.
Main Job Responsibilities:
- Preparation: Filleting, cleaning, shucking, dressing, and cracking shellfish like crabs, lobsters, and oysters. Custom Cuts: Trimming and portioning seafood to meet the specific size or recipe specifications of customers and restaurant clients.
- Sales: Customer Advice: Recommending fish species and cuts, explaining flavour profiles, and suggesting cooking methods or recipes. Order Fulfilment: Weighing, pricing, and packaging products accurately, while processing cash or card payments.
- Display: Ice Management: Building and maintaining fresh beds of crushed ice to keep products cool and visually appealing. Attractive Presentation: Arranging fish, shellfish, and value-added products (like pre-stuffed fillets) to attract buyers.
- Stock: Inventory Control: Taking delivery of fresh supplies, rotating stock to minimize waste, and ordering inventory from wholesalers.
