The Executive Assistant Manager – Food & Beverage (EAM F&B) is a senior executive leadership role responsible for the strategic direction, operational excellence, and financial performance of all Food & Beverage operations at an award-winning luxury oceanfront resort in East Africa. The property features six distinctive restaurants and bars, extensive event and private dining venues, and an exclusive golf resort catering to a sophisticated, high-net-worth international clientele. This role requires a highly experienced, hands-on Food & Beverage leader with a proven international luxury background and the ability to consistently deliver world-class culinary and service experiences in a luxury oceanfront environment.

Key Responsibilities:

  • Provide strategic leadership and hands-on operational oversight for all Food & Beverage outlets, including fine dining, casual dining, bars, lounges, in-room dining, banqueting, events, and golf resort F&B operations.
  • Ensure all outlets operate in full alignment with the brand standards, service philosophy, and quality expectations of the international luxury hotel group.
  • Lead, coach, and inspire a large, multicultural Food & Beverage team, fostering a culture of excellence, accountability, and guest-centric service.
  • Actively participate as a member of the Executive Committee, working closely with the General Manager to support the overall vision, positioning, and long-term success of the resort.
  • Deliver highly personalized, anticipatory service tailored to discerning international and golf resort guests.
  • Maintain exceptional service standards across all dining experiences, ensuring consistency, elegance, and attention to detail.
  • Build strong relationships with VIP guests, repeat clientele, and high-profile visitors, proactively addressing guest feedback and expectations.
  • Oversee the development, execution, and continuous enhancement of all restaurant and bar concepts.
  • Ensure a diverse, innovative, and refined offering of international cuisine, incorporating local and regional influences where appropriate while meeting global luxury standards.
  • Work closely with the Executive Chef to drive menu innovation, product quality, presentation, and seasonal programming aligned with international trends.
  • Assume full responsibility for the financial performance of the Food & Beverage division, including budgeting, forecasting, cost control, and profitability.
  • Drive revenue growth through strategic pricing, menu engineering, upselling initiatives, and effective labor and inventory management.
  • Identify and implement opportunities to enhance revenue across restaurants, bars, events, private dining, and golf operations.
  • Ensure full compliance with all brand standards, food safety regulations, health and safety requirements, and local statutory guidelines.
  • Prepare and lead the Food & Beverage division through internal audits, brand reviews, and quality assurance assessments.
  • Protect and enhance the resort’s award-winning reputation through consistent delivery of excellence.

Requirements:

  • Minimum 8-10 years of progressive Food & Beverage leadership experience within international luxury hotels and resorts.
  • Mandatory experience with a well-established international luxury hotel or resort group.
  • Proven track record overseeing multiple restaurants and bars in high-end, oceanfront or resort environments.
  • Strong experience in international cuisine, with prior exposure to East Africa and comparable luxury leisure destinations highly preferred.
  • Experience within a golf resort or premium leisure environment is strongly desirable.
  • Demonstrated ability to operate within global brand standards while adapting to local cultural and market nuances.
