The Torridon is a luxury Highland resort set on the shores of Upper Loch Torridon, surrounded by some of Scotland’s most dramatic landscapes. Responsible to: Resort Food and Beverage Manager

Responsible for: Hosting wine, bar and drinks service to guests

Hours: 45 over 5 days

Scope and general purpose: To supervise the smooth, efficient and faultless guest beverage experience at The Torridon. Ensure the team with you on duty are working in a positive, productive, friendly, and fun environment. Exceed the expectations of our guests to +1 service, inspire and create unique memorable experiences of escape and adventure, so everyone feels special.

Main responsibilities:

  • Host and coordinate the wine and bar experience for all guests.
  • Provide in-depth knowledge of all drinks including wine, champagne, cocktails, whisky, non-alcoholic, and all other beverages to assist guests in their choice.
  • Create and co-ordinate wine flights relevant to price, and quality match to food.
  • Create and advertise seasonal and signature drinks for all guests.
  • Quality control of storage of all drinks.
  • Support the Food and Beverage Team as necessary.
  • Deliver on the expectations of Forbes 5* - Genuine Sense of Interest, anticipate needs of all guests, Provide a sense of luxury in drinks service.
  • Ensure any guest complaints or frustrations during service are communicated on.

Productivity:

  • Cash up all the takings, and receipts, record and ensure all drinks are accounted for to guests’ rooms or charged correctly.
  • Assist the Resort Food and Beverage Manager with the management of the wine cellar.
  • Organise stock and re-stock and replenish bar supplies to ensure efficiency, quality and quantity.
  • Coordinate the cleaning of stations, equipment and fridges to Torridon standard.
  • Assist with the service of food as required to support the Bo & Muc and 1887 Restaurant teams.

Health & Safety:

  • Manage the safe service of alcohol and compliance with licensing laws.
  • Lock up the bars at the end of service so the building is secure and safe.
  • Supervise all Health & Safety for the department to ensure safe environment for yourself, suppliers, team and guests.

Team Performance:

  • Liaise with the Resort Food and Beverage Manager in supporting professional drinks service and knowledge, sharing best practice and information on products, guests, team as necessary.
  • Communicate effectively with the food service team, front of house and other departments.
  • Supervise drinks and wine training for the teams as required.
  • Develop wine and drinks knowledge for self, with a continuous improvement and competitive awareness.

Sustainability:

  • Assist with the ESG policy to achieve the Sustainability goals of the company by embedding it into the departments and within the whole team.
  • Be able to lead communication on our ESG policy and Earth Check to the team, guests, and suppliers.
  • Be an active member of the Green Team Initiatives.
  • Liaise with our Head Gardener to promote the use of kitchen garden products in both bars for our guests.

Qualifications: This is a hands‑on, guest‑facing role for someone who combines genuine warmth with confidence and technical expertise. You will curate and deliver a thoughtful wine and bar offering, ensuring each interaction feels personal, engaging, and quietly refined. Working closely with the wider food and beverage team, you will play an important role in shaping how our guests experience wine, whisky, and the wider drinks culture of the Highlands. The ideal candidate will be:

  • A strong interest in wine and beverages; formal training or qualifications are advantageous.
  • Preferably have WSET level 2.
  • Previous experience in a similar role within a quality‑led hospitality environment.
  • A natural host, with a warm and engaging manner.
  • Attentive to detail, with a calm and thoughtful approach to service.
  • A team player with the ability to support and inspire others.
  • A genuine passion for hospitality and continuous learning.
