This is an exciting opportunity to join the team at our award winning Idle Rocks Hotel and Restaurant, in St Mawes, Truro, Cornwall.

As The Idle Rocks Restaurant Manager, you will be responsible for managing operations to deliver an exceptional guest experience. Your responsibilities will include:

  • Coordinating daily restaurant management operations at The Idle Rocks.
  • Delivering first-class guest service at all times.
  • Growing the team spirit between the front of house and kitchen staff.
  • Maintaining the restaurant’s revenue & quality goals.
  • Ensuring the smooth running of the restaurant operations.
  • Maintaining company philosophy through standard operating procedures and sequence of service.
  • Recognising and ensuring correct service standards during the operation.
  • Handling feedback & complaints.

Additional responsibilities include:

  • Management of F&B staff rotas according to business demand.
  • Delivering superior service and maximising customer satisfaction.
  • Responding efficiently to customer complaints.
  • Appraising staff performance and providing feedback to improve performance.
  • Ensuring compliance with sanitation and safety regulations.
  • Controlling operational costs and identifying measures to cut waste.
  • Training new and current employees and maintaining service practices.
  • Providing strong leadership.
  • Recruiting and sourcing excellent staff members that believe in the goals and philosophy of the company.
  • Keeping Food and Beverage and overhead trackers up to date and accurate.
  • Ensuring the restaurant space and terrace is maintained and presented to the highest level.
  • Supporting events and large group bookings to ensure they are run effectively.
  • Coordinating with reservations team to maximise bookings and manage cancellations & no shows.

About you:

  • You have flair and passion for service to achieve the highest of standards.
  • You are flexible, articulate and have a desire to progress to the next level.
  • You are a Restaurant Manager keen to expand your knowledge and skill set.
  • You are hard working, reliable, trustworthy, and competent enough to work alone.
  • You have at least 2 years’ experience as Assistant Restaurant Manager.
  • You are calm and focused in a high pressure, busy environment.
  • You have a good understanding of food stock management.
  • You have a willingness to learn and a great commitment towards work.
