Red D are recruiting a Director of Food & Beverage for one of Ireland's leading five-star luxury hotels. This is a rare and rewarding opportunity for a seasoned Food & Beverage leader to take the reins of a world-class operation. You'll oversee a portfolio of stunning restaurants, bars, lounges, event spaces, and private dining outlets all within a property celebrated for its service, style, and exceptional guest experiences.
We're looking for someone with gravitas - a mature leader with experience managing large teams across multiple outlets, confident in making key decisions, and dedicated to delivering five-star standards every day. What You'll Be Doing:
- Leading all food and beverage operations across multiple restaurants, bars, lounges, in-room dining, and event spaces
- Working closely with chefs and service teams to ensure flawless guest experiences that reflect the hotel's five-star standards
- Mentoring and inspiring a large, multi-layered team, ensuring everyone feels supported and empowered to succeed
- Overseeing budgets, financial planning, and cost control, while never compromising on quality
- Collaborating with other senior leaders including Sales, Events, Marketing, and Rooms to ensure every guest journey is seamless
- Championing innovation while honouring tradition - bringing fresh ideas to food and service without losing sight of what makes this property special
- Maintaining the highest standards for health, safety, hygiene, and guest satisfaction

What We're Looking For:
- Proven experience as a Director of Food & Beverage or multi-outlet F&B Manager in a five-star or luxury hotel environment
- A mature, composed leader who has successfully managed large teams across diverse outlets
- Commercially astute with a strong track record of achieving financial targets while delivering exceptional guest experiences
- A hands-on approach, leading from the front and engaging with both guests and teams
- Deep knowledge of the luxury hospitality landscape and what it takes to exceed guest expectations consistently
