About the Restaurant

This Shoreditch institution began as a street food concept and has evolved into one of London's most iconic wood-fired barbecue restaurants. With a stripped-back, industrial design and an open kitchen built around a custom smoker and grill, it's a destination known for bold, smoky flavours, honest cooking, and serious attention to craft. The menu is built on slow-smoked meats, refined comfort dishes, and seasonal produce, all served in a high-energy, guest-first setting. This isn't a cookie-cutter brand. It's a team-led environment, grounded in authenticity, loyalty, and pride in delivering a consistently excellent experience to every guest, every service.

The Role

We are seeking an outstanding General Manager to take the lead at this fiercely loved East London restaurant. You'll be the driving force behind the team culture, service standards, and operational performance. Reporting directly to the owners, you'll have the autonomy to shape your team, drive performance, and build long-term success with care and intent.

  • Lead, inspire and develop a large front-of-house team
  • Oversee daily operations across lunch and dinner service
  • Deliver consistently high standards of guest experience
  • Manage P&L, labour, stock control, and supplier relationships
  • Own recruitment, onboarding, and team performance management
  • Champion the brand values and maintain a positive, inclusive team culture
  • Ensure compliance with all licensing, health and safety, and hygiene standards
  • Collaborate closely with the kitchen and ownership on strategy and standards

About You

  • A proven General Manager with a background in busy, quality-driven London restaurants
  • Deep understanding of hospitality leadership - you're a team builder, not just a manager
  • Confident with financials, systems, and processes
  • Obsessed with the guest experience - you lead from the floor, not the office
  • Calm under pressure, focused on solutions, and committed to standards
  • Passion for food, drink, and people - no ego, just great energy
  • Experience using systems like Lightspeed, SevenRooms, or similar (preferred)

The Offer

  • Competitive salary up to £80,000
  • 28 days holiday
  • Generous staff food and dining discounts
  • Structured development and training opportunities
  • Exposure to exceptional suppliers, producers, and experiences
  • Socials, staff trips, and team perks
  • Opportunity to be part of a growing, respected independent restaurant group
