Under the strategic guidance of Romy Gill, this is a rare opportunity to be part of a bold culinary evolution within a luxury hotel environment. As a Tandoor Chef, you will be at the heart of this direction, leading one of the most critical elements of the kitchen; bringing authenticity, precision, and creativity to a concept designed to stand out in London’s competitive dining scene.

This role offers the chance to shape a signature offering, develop specialist expertise, and contribute to a high‑profile, ambitious repositioning of an award‑recognised restaurant.

Here’s what you’ll do during a typical day:

  • Prepare, cook and present high‑quality dishes using traditional tandoor techniques.
  • Take ownership of the tandoor section, ensuring consistency, quality, and exceptional presentation.
  • Prepare all mise‑en‑place to support efficient and seamless service.
  • Ensure all food preparation meets brand standards, food safety, and hygiene requirements.
  • Work closely with the Head Chef and Sous Chef to support menu development aligned with the new concept.
  • Maintain a clean, safe, and organised working environment at all times.
  • Support the wider kitchen team to deliver a high‑performing, cohesive service.
  • Contribute to the training and development of colleagues where appropriate.

What are we looking for?

  • Proven experience as a Tandoor Chef or strong experience working with tandoor cooking techniques.
  • A solid understanding of traditional methods, including marinades, breads, meat and seafood cookery.
  • Experience within a high‑quality or fine dining kitchen environment is highly desirable.
  • A passion for South Asian cuisine and a genuine interest in modern, refined interpretations.
  • Strong attention to detail with a commitment to delivering consistently high standards.
  • Positive attitude with the ability to work independently and as part of a team.
  • Excellent communication skills and the ability to perform under pressure.

Benefits:

  • Salary up to £40,750 (Basic salary: £17.65/hour plus an expected average annual service charge likely to be between £4,500 – £5,000). Based on a 39‑hour contract.
  • 28 days holiday including bank holidays (increasing yearly to up to 33 days).
