We are seeking to appoint a passionate and highly motivated Sous Chef to support our valued Client, an independent Pub with rooms, currently operating at one Rosette. Based in the Stroud area, working alongside a small team of experienced, passionate chefs, the key focus of the Sous Chef role will be supporting the Head Chef, a chef with a very strong background in running two Rosette kitchens. His vision is to go for two Rosettes, as soon as he has the right team in place, in his brigade, producing comforting, well‑cooked British / French dishes, using fresh, local, seasonal ingredients.
Responsibilities
- Lead shifts and take full control/responsibility for the kitchen where the Head Chef is not present.
- Train, lead and mentor the more junior members of this friendly, inclusive team.
- Work with good produce in a friendly environment with excellent facilities and a fabulous, supportive owner.
- Contribute to menu development and presentation.
- Be an all‑rounder, able to take control of the grill and step into any of the other kitchen sections with ease and confidence.
Qualifications
- Already be working at one Rosette level; two would be fantastic, but not essential.
- Possess drive, and a real passion for cooking.
- Be a Sous Chef who is happy to learn while also offering support.
- Relish contributing to ideas for the menu.
- Lead the kitchen in the Head Chef’s absence, with confidence.
- Appreciate the work/life balance that is offered, in a non‑corporate environment.
- Show initiative and offer flexibility.
- Work closely with the Head Chef & kitchen team to produce exciting dishes.
- Have a current minimum Level 2 Food Safety Certificate, but this can be arranged.
- Have a love for seasonal and local produce.
- Demonstrate a solid skill set including sound knowledge on meat, fish and veg prep.
- Have experience at Sous Chef level in a similar property, or the Client would be happy to consider a Junior Sous Chef, with the right attitude, who is looking to step up and learn.
