Merchant City Casino is Scotland’s biggest, busiest and most vibrant casino, right in the heart of Glasgow. Open 24/7 with tables, slots, electronic gaming, poker, food, drink and bars open until 6am, it’s the city’s top late‑night destination.
As the Food & Beverage Manager, you’ll bring energy, leadership and personality to a fast‑paced, dynamic environment while taking full ownership of the department’s overall success. You’ll be passionate about delivering outstanding food and drink experiences, balancing professionalism with a hands‑on and approachable leadership style.
This role requires a proactive individual who thrives on leading from the front, driving standards, and creating a culture of excellence across the entire F&B operation within the Casino. You will take complete ownership of the food and beverage offering, providing clear direction on service standards, product quality, guest experience and operational performance.
A key part of the role will be developing, motivating, and inspiring your team. You’ll conduct regular 1-2-1s, support performance management, identify training needs, and actively upskill team members to help them grow within the business. You’ll create a positive and accountable culture where individuals feel supported, challenged, and empowered to succeed.
You’ll also oversee stock control, ordering, compliance, and health & safety, ensuring the department operates safely, efficiently, and in line with company standards at all times.
Skills & Experience Needed:
- Previous experience as a General Manager, Assistant Manager, or Food & Beverage Manager within a fast-paced branded or independent hospitality environment.
- Strong leadership skills with experience managing, coaching, and developing teams.
- Proven ability to conduct 1-2-1s, deliver training, and drive team performance through continuous upskilling and support.
- Experience taking ownership of a full F&B offering, with a passion for delivering exceptional guest experiences.
- Strong commercial awareness, including stock control, ordering, rota management, and operational analysis.
- Personal Licence Level 3 qualification (current or previously held preferred).
- A proactive, passionate, and hands‑on approach with excellent attention to detail.
