The Deputy Restaurant Manager will take responsibility for the daily running and leadership of the restaurant delivering a high level of service, managing the line staff and supporting management. Take an active role in departmental administration including rotes, training plans, onboarding, stock ordering and delivery. Developing the outlet and staff to ensure all standards are being met whilst having the ability to pre‑empt and deliver a luxurious and high‑quality level of service to our guests and the ability to deal confidently with customer complaints. You will work in close contact with the kitchen and reservation teams to ensure smooth and consistent service whilst surpassing the guests' expectations.
Responsibilities
- Develop and document steps of service and service standards, continually reviewing and improving standards.
- Ensure service continues meeting Raffles brand standards.
- Manage food and beverage service, stock, wastage and breakages.
- Communicate with guests and hotel staff in a professional manner.
- Collaborate with other departments and managers to deliver high quality service.
- Serve as a hands‑on leader and mentor for the line department.
- Develop and implement staff onboarding, training plans, regular appraisals and one‑on‑ones.
- Generate fair and business‑justified department rotas, maintain labour cost targets.
- Serve food orders, remove used dishes, maintain safety standards.
- Assist wait staff with table setting and seat service.
- Explain dishes to guests accurately and professionally.
- Operate as the contact point between Front‑of‑House and Back‑of‑House staff.
- Respond to customer enquiries and complaints in a professional manner.
- Add additional duties as required when the line manager or senior employee is absent.
- Perform other duties as assigned, including working in other departments or restaurants.
- Handle pulling, lifting, pushing or manual handling, and night shift duties as needed.
Leadership
- Contribute to effective cost management and profit & loss of the department.
- Review and identify revenue‑boosting opportunities with the manager.
- Ensure rotas comply with legislation and meet business & guest needs.
- Plan holidays and lieu days per hotel procedures.
- Advisory role on hotel policies and procedures.
- Hold daily briefings with each shift.
- Provide regular feedback and perform appraisals in line with company procedures.
- Maintain training records for all employees.
- Meet improvement targets related to employee turnover and attitude surveys.
- Maintain composure under pressure and provide guidance to the team.
- Encourage and recognize creativity and innovation among staff.
Health & Safety
- Report and rectify any potential or real hazards immediately.
- Be fully conversant with all departmental fire, emergency and bomb procedures.
- Ensure safety of persons and property by adherence to laws, statutes and ordinances, and proactive hazard management.
- Promote awareness of health & safety in all tasks and activities.
Requirements
