Seamill Hydro Hotel and Resort is excited to introduce Tides, the fresh new restaurant concept, and we’re looking for enthusiastic and passionate Sous Chefs of all levels to join our kitchen team. Whether you are an experienced Sous Chef or a strong Chef de Partie ready to take the next step, this is an exciting opportunity to grow within a supportive and ambitious kitchen brigade.

Working closely with our Head Chef and senior kitchen team, you will play a key role in delivering exceptional food across Tides, weddings, and events. This role offers genuine opportunity for development, progression, and the chance to contribute to the continued success of our acclaimed dining offerings.

Part of the RAD Hotel Group, Seamill Hydro Hotel is a stunning coastal destination overlooking the Firth of Clyde. You’ll join a passionate team committed to delivering outstanding food and memorable guest experiences in one of Scotland’s most scenic hospitality settings.

What You’ll Be Doing:

  • Support the Head Chef in the day-to-day running of kitchen operations
  • Maintain high standards of food quality, preparation, and presentation
  • Ensure strict adherence to food safety, hygiene, and health & safety standards
  • Assist with stock control, ordering, and minimising wastage
  • Help train and mentor junior chefs, fostering a positive team environment
  • Work collaboratively with front-of-house and events teams to ensure seamless service

What We’re Looking For:

  • Experience as a Sous Chef or strong Chef de Partie ready to progress
  • Experience in high-volume hotels, restaurants, or banqueting is desirable
  • Strong culinary skills with excellent attention to detail
  • A positive attitude and ability to perform well under pressure
  • Good communication and teamwork skills
  • A passion for hospitality and delivering exceptional dining experiences
