We’re looking for a passionate and highly organised Head of Banqueting Chef to lead our kitchen at Brig o' Doon House Hotel and deliver exceptional food experiences for weddings, conferences, and special events. You’ll be responsible for the smooth and efficient operation of the banqueting kitchen, leading a talented team to produce high-quality dishes for large-scale occasions, while maintaining the outstanding standards our guests expect. Working closely with the Weddings & Events team, you’ll ensure seamless execution from kitchen to service, making this a fantastic opportunity for a driven chef who thrives in a fast-paced environment and takes pride in creating memorable dining experiences for special moments.

What You’ll Be Doing:

  • Lead, motivate, and inspire the banqueting kitchen team, ensuring smooth operations.
  • Oversee all aspects of food preparation, cooking, and presentation, maintaining the highest quality and standards.
  • Manage food costs, stock control, ordering, and inventory to ensure efficient resource management.
  • Collaborate closely with the Weddings & Events team to ensure seamless event delivery.
  • Train, mentor, and develop junior chefs, fostering a culture of learning and growth.
  • Ensure compliance with food safety, health, and hygiene regulations at all times.
  • Support restaurant and private dining food service when required.
  • Continuously improve banqueting processes to optimise efficiency and quality.

What We're Looking For:

  • Proven experience at Head Chef or Sous Chef level in a high-volume kitchen environment.
  • Background in conference and banqueting service is highly advantageous.
  • Strong leadership skills with the ability to motivate and manage a team effectively.
  • Excellent culinary skills with a creative flair and strong attention to detail.
  • A confident communicator and effective team player.
  • Thorough understanding of food safety and hygiene regulations.
  • Exceptional organisational skills with the ability to manage multiple tasks and priorities efficiently.
