Reports to: Executive Chef

HCL is a leading contract caterer specialising in school feeding. The role supports training and mobilisation across primary and secondary schools and commercial sites, with a focus on public sector procurement of school feeding services. The post holder will contribute to menu development, practical hands-on training, and ensuring high standards across all sectors in Hertfordshire and expanding the portfolio in London and the South of England.

Main Responsibilities

  • Mobilisation Support: Train menu compliance, cooking processes, and counter setups within new business to ensure food production methods, purchasing compliance, and alignment with HCL food values.
  • Quality Testing: Work with the Food Development team to product test in schools; train culinary teams to address remedial training needs, service flow challenges, and implement recipe corrections or improvements.
  • Identify and Address Gaps: Identify skill and knowledge gaps; create and deliver training courses and resources to embed knowledge across existing and new contracts.
  • Follow Quality Processes: Adhere to and train standards in line with HCL Quality Audit (QA) processes and checklists; monitor and review standards, ensuring compliance with statutory food, allergen, WGLL (What Good Looks Like) standards, budgets, and menu specifications.
  • Ensure Standards Compliance: Train, refresh, audit, and monitor all HCL food standards, policies, and procedures; deliver reports and data to support HR and operational training, identifying skills gaps and implementing training plans.

Person Specification

  • Experience in working flexibly within a team and promoting a positive development culture in new and existing contracts.
  • Experience in mobilising, training, and managing a new contract, building client relationships, and upholding high standards.
  • Ability to write detailed reports documenting observations, training delivered, and recommendations for compliance.
  • Experience and knowledge of delivering accredited food hygiene and allergy qualifications (Highfield accredited Trainer and Member).
  • Experience of effective on the job training and coaching that drives performance and development.
  • Confident and competent in training standards and compliance across multi-site settings (new business) or existing contracts.
