The Indo-Chinese Grill Chef is responsible for preparing high-quality Indo-Chinese dishes, managing grill cooking operations, maintaining hygiene and safety standards, and supporting kitchen efficiency. The role involves supervising grill stations, menu preparation, and using your knowledge and experience in Indo-Chinese cooking techniques to deliver consistent quality and presentation.
Main Tasks
- Prepare and cook a wide range of Indo-Chinese dishes, including appetizers, mains, and sides, maintaining authentic flavours.
- Manage the grill section, including tandoor, barbecue, and open flame cooking, ensuring consistent quality and presentation.
- Monitor food quality, portion control, and taste to ensure consistency across all dishes.
- Assist in menu development, suggesting Indo-Chinese specials and seasonal dishes.
- Maintain cleanliness, organisation, and hygiene in all kitchen areas according to legal standards.
- Prepare ingredients, marinate meats, seafood, and vegetables to the required recipes.
- Supervise, train, and mentor junior kitchen staff in Indo-Chinese cooking and grill techniques.
- Work efficiently during service hours to ensure timely delivery of all dishes.
- Manage stock levels for the grill and Indo-Chinese sections, including ordering and storage.
- Comply with food safety, hygiene, and health & safety legislation at all times.
- Ensure kitchen equipment, especially grills and fryers, is maintained and safe to use.
- Liaise with Head Chef or management to coordinate menu preparation and specials.
- Implement waste control procedures and monitor food costs to minimise loss.
- Handle customer requests for special diets, allergies, or modifications responsibly.
- Report regularly to Directors/Managers on kitchen performance and improvements.
- Carry out any other reasonable duties to support smooth running of the kitchen.
Knowledge & Experience Requirements
- Proven experience in Indo-Chinese cuisine and grill cooking techniques.
- Ability to handle tandoor, open-flame grills, woks, and fryers safely and efficiently.
- Strong understanding of flavour profiles, spice balance, and presentation of Indo-Chinese dishes.
- Knowledge of hygiene and health & safety standards in professional kitchens.
