  • Main Purpose of the Position
  • Prepare breads from our various ranges and other baked products.
  • Responsible for measuring and preparing ingredients, properly baking bread and performing other ad hoc tasks. This includes mixing, scaling, shaping before baking.
  • Ensure all products are made to the set quality standards and in line with daily orders daily.
  • Monitor production in a consistent and professional manner.
  • Manage high volumes.
  • Maintain cleanliness of your work area including utensils and equipment.

Key Responsibilities

  • Baking
  • (Mix, shape and bake!)
  • Working with others, ensure that the correct breads are prepared in line with quality requirements and standard operating procedures to fulfill customer orders and minimise wastage.
  • Mixing
  • Ensure correct mixes are selected and followed to meet customer orders.
  • Ensure correct quantities of ingredients are calculated and used to achieve the required mix whilst minimising waste.
  • Combine ingredients in the right order and use the appropriate mixing methods to produce the required mix.
  • Ensure mixes are done in the correct order depending on quantities and equipment available for shaping and baking.
  • Divide the mixed dough at the correct weight into appropriate quantities for shaping.
  • Apply the FIFO rule (first in first out) for all raw material used.
  • Inform line managers of any need to reorder ingredients and ensure stock is reported promptly to avoid any out of stock situation.

  • Form the dough into the correct size and shape in line with Company quality and quantity requirements.
  • Ensure the correct size and type of baking tins and trays are prepared and used for the required product.
  • Ensure baking tins and trays are stacked for proving following set Company operating procedures.
  • Ensure dough is properly proved before baking to achieve Company quality requirements.
  • Start and end the baking process at appropriate times and at the correct temperature settings to ensure quality of each product.
  • Ensure the quantity of product to bake is checked against the production list and that any shortage or extra is reported promptly.
  • Store finished goods as per Company requirements.
  • Adhere to Company rules and procedures on Hygiene and Food safety at all times to ensure customer satisfaction and protect the business.
  • Report any food safety hazards and breaches of the Hygiene and Food Safety rules to line managers immediately.
  • Health & Safety
  • Comply with Company Health & Safety rules and procedures to ensure the health & safety of yourself, colleagues and all customers and visitors.
  • Report any accident or unsafe practice to line managers immediately.
  • Report any misuse, unauthorised removal or deliberate damage to equipment safety guards, safety signage and Personal Protective Clothing or Equipment to your line managers immediately.
  • Maintain tools & work area
  • Ensure that your work area is cleared and left clean at the end of each task/ shift.
  • Ensure that tools/ utensils/ equipment are stored and cleaned in line with operating procedures.
  • Ensure that any equipment used is left clean at the end of each task/ shift and that any problem or defect is reported to line managers immediately.

You will be able to organise and schedule your own work with minimal supervision whilst following the direction of your line managers and the Company.

  • A minimum of 2 years experience in baking bread and other baked products.
  • Ability to produce bread using manual and/or industrial processes.
  • Knowledge of raw materials for dough, dough preparation times and procedures and various baking techniques.
  • Ability to operate electric bread ovens.
  • Knowledge of health, safety and hygiene regulations for food preparation.
