We are recruiting for an experienced Fish Filleter to join a well-established and respected Scottish food business. This is a hands-on role for someone who takes pride in their craft and enjoys working with premium fresh fish and seafood products. This position offers the opportunity to join a quality-focused business where skilled fish preparation remains at the heart of the operation.
Key Responsibilities
- Filleting, skinning, pin-boning and portioning a wide variety of fresh fish
- Preparing whole fish for sale and display
- Shucking oysters and scallops
- Maintaining exceptional standards of hygiene, food safety and product quality
- Supporting wider operational activities during busy periods
- Working efficiently within a chilled food production environment
- Assisting with sourcing and purchasing activities where required
About You
- Previous experience as a Fish Filleter, Fishmonger or similar skilled seafood professional
- Excellent knife skills and attention to detail
- Strong understanding of food safety and hygiene requirements
- Comfortable working in a fast-paced environment
- Reliable, hardworking and quality-focused
- Seafood buying experience would be advantageous but is not essential
