This role is to oversee the day to day service of the Restaurant and Cafe while supporting the team and working with them during shift, keeping the department compliant with all legislation and training and ensuring the highest standards of customer care.

Example of duties:

  • Supervision of the retail team and provide support in the day to day services and operations ensuring the safe and compliant delivery of services.
  • Liase with the back of house team.
  • Ensure compliance of HACCP and FSM Systems.
  • Staff training and trust procedures.
  • Cleaning and maintaining department equipment.
  • Deal with complaints and compliments in an appropriate manner.
  • Probing of food items to ensure they meet the required temperatures.
  • Organise, supervise and partake in the picking, replenishment and distribution of food items for all retail services.
  • To be accountable to the Patient and Retail Relations Manager in the provision of retail operations and to have full responsibility for managing aspects of the operation as required.

Example of supervision:

  • The supervision of a small group of retail assistants and provide constant support to them in the day to day operations of the retail units operations and processes ensuring that food is delivered in the correct and appropriate fashion.
  • To notify the Manager of any discrepancies in the deliveries of the service, such as Product unsuitability, Allergen discrepancies, Packaging issues, Shelf life, Equipment failure and other safety standards as laid out by the trusts policies and procedures and HACCP policy ensuring that Food safety compliance is maintained at all times.

Stock and Appraisal:

  • Manage stock rotation and ordering as required following the FIFO rule and that storage standards are maintained correctly as required by the Catering Manager /Retail lead.
  • To complete all departmental appraisals, ensure all team members are compliant with all training requirements, to recognise all team achievements and failures and offer specific Praise and constructive criticism to encourage the team.
  • The cleanliness of the department at all times must be maintained including regular deep cleans and the movement of equipment to facilitate this.
  • Liaising with Chefs to compile and produce daily menus with correct Allergen data to ensure consumer safety at all times.

Detailed job description and main responsibilities:

The post holder will be responsible for managing their own workload, prioritising tasks effectively, and ensuring deadlines are met. They will be expected to work independently as well as part of a team, demonstrating flexibility and a commitment to high standards. Requires excellent communication and organisational skills. Maintaining safe systems and processes of work, Assist with Rotas and ordering, support the department to achieve the maximum food hygiene rating and internal audit rating. Follow standards and specifications, reporting of maintenance issues and helping to continually improve the customer experience.

Duties and responsibilities:

  • To take full responsibility for providing assistance to the manager with driving efficiencies, food ordering, keeping the department clean, hygienic and safe, required stock kept as required, preventing over ordering and promoting the department within the trust and the community.
  • Provide full support to the team and taking responsibility for food service delivery, and presentation including portion control measures, allergen recording and the typing and distribution of menus for daily meal services, and advising on dietary requirements as requested.
  • This will require keeping fully up to date with legislative guidelines and food standard agency alerts.
  • Ensuring team members are recognise the urgency and time critical requirements of the day and its routines.
  • Constantly supporting the Manager by ensuring that all departmental records are kept up to date and ready for inspection at all times and adhered to at all times.
  • Ensure that the departments COSHH manual and PPE requirements are kept up at all times for all tasks.
  • Keep up to date and actively participate in the trusts Fire response procedures for the department.
  • Ensure that FIFO stock rotation is used throughout the department to prevent wastage.
  • Ensure that all food is held and stored at the correct temperatures and that labels are used and compliant for the product.
  • Ensure that hot and cold foods reach critical control point requirements and deal with any discrepancies as per the departments policy.
  • Ensure the cleaning schedule is completed daily and all additional cleans are allocated and documented as required.
  • Keep shifts strictly to the internal rota and seek approval from the Retail Manager /Catering manager prior to any deviation.
  • Ensure that the trust materials are being used correctly and used efficiently to ensure wastage is kept to a minimum.
  • Liaise closely with the Head chef and the catering team.
  • Attend and hold team meetings as required and support ideas to improve the service.
  • Attend all Mandatory training including Food Hygiene and any others deemed necessary for continued professional/personal development.
  • Report all faults in the fabric, furniture, fixtures and fittings of the department to the estates department and the manager.
  • To operate tills for the processing of cash and card payments.
