We’re now looking for a Labour Controller to join our Finance team – someone who can balance cost control with care for our people, helping our restaurants run efficiently while never losing sight of the guest experience.
The Role
As Labour Controller, you’ll ensure the principles of effective labour scheduling are understood and applied across all restaurants. Working closely with Operations and Finance, you’ll analyse data, challenge assumptions, and drive smarter scheduling decisions that optimise service and cost. You’ll be hands-on in identifying risks, coaching teams, and ensuring every rota supports both sales performance and team wellbeing.
Key Responsibilities
- Monitor labour spend daily, weekly, and monthly, highlighting risks and opportunities.
- Partner with Operations to guide scheduling and ensure optimal service levels.
- Collaborate with Finance to align labour budgets, P&L expectations, and forecasts.
- Analyse labour performance, providing actionable insights to senior leaders.
- Support Marketing campaigns and seasonal peaks with proactive workforce planning.
- Coach restaurant managers to drive consistent scheduling discipline.
- Adjust rotas when needed to ensure compliance and performance.
What We’re Looking For
- Proven experience in labour planning, workforce management, or operational finance (hospitality or retail).
- Confident user of Fourth labour scheduling systems.
- Strong analytical mindset with excellent Excel and reporting skills.
- Commercially astute, able to balance cost efficiency and guest experience.
- Excellent communication and stakeholder management skills.
- Resilient, proactive, and comfortable working across a multi-site business.
