Senior Sous Chef - Banqueting at The Stables Prestonfield House, Edinburgh

£57,000 per annum (£50,000 salary +bonus and tips)

4 day working week

Prestonfield House is looking for an experienced and passionate Senior Sous Chef to join our banqueting kitchen team.

This is a fantastic opportunity for a talented chef who thrives in a busy, high-volume environment and takes pride in delivering outstanding food and service for memorable events.

The Role

Predominantly based in our spectacular Circular Stables Ballroom, you will play a key role in leading the banqueting kitchen and delivering exceptional food for events ranging from 150 to 500 guests.

You will work closely with the Head Chef, contributing to menu development and ensuring the highest standards of food quality, consistency and presentation. While your primary focus will be banqueting, you will also have the opportunity to work within the main hotel kitchen and run a section when required.

Key Responsibilities

• Take responsibility for the preparation and smooth running of the banqueting kitchen.
• Lead and support the kitchen team during events serving between 150 and 500 guests.
• Ensure food is prepared, cooked and presented to the highest possible standard.
• Take full responsibility for ordering, stock control and kitchen requirements for banqueting.
• Manage food preparation and service efficiently within a high-volume environment.
• Ensure all food safety, hygiene, health & safety and compliance standards are consistently maintained across the banqueting kitchen.
• Support the Head Chef with menu development and contribute ideas and creativity.
• On occasion, work within the main hotel kitchen and confidently run a section.
• Lead by example, motivating and developing the kitchen team.
• Maintain the exceptional standards expected at Prestonfield House.

About You

We are looking for an experienced Senior Sous Chef or experienced Sous Chef with a strong background in banqueting and high-volume service.

You will ideally have:

• Previous experience working in a senior kitchen position within a 5 star hotel, events or banqueting environment.
• Experience preparing and serving large numbers of guests.
• A strong understanding of fresh food production and high-quality cooking.
• Experience working alongside a Head Chef and contributing to menus.
• Excellent organisational and communication skills.
• Experience with ordering, stock control and kitchen compliance.
• The confidence to lead a team during busy services.
• A calm, hands-on approach and the ability to perform under pressure.
• A genuine passion for food, quality and hospitality.

Our package includes:

• The on-target earning potential for this role is £57,000 per annum, comprising a base salary of £50,000 plus bonus and a share of staff
• 48 hours per week, working pattern 4 days on 3 days off
