Roles & Responsibilities
- Responsible to cook South Indian and North Indian food items, including Tandoor, Prata, Snacks, Sweets, and beverages.
- Particularly Sambar, Rasam, Puligravy, Moorkulamabu, all types of Kootu, Poriyal, Piratal, Masial, Fried items, Pachati, and salad items.
- Kuruma, all Manjurian, Briyani, and all types of Fried Rice.
- Fully responsible for taste, quality, and hygiene of the food produced.
- Responsible for Quality Control of kitchen food production operations.
- Taste and certify each and every food produced before it is served.
- Ensure assistant cooks follow the correct recipe methods of the restaurant.
- Inspect raw materials and certify they are of prescribed quality.
- Check the freshness of vegetables before cooking.
- Must have experience in fast-paced vegetable cutting and cleaning operations.
- In case of emergency, capable of performing the duties of a Vegetable cutter or Dishwasher.
- Must have a strong healthy body to carry heavy utensils.
- In emergencies, must load/unload cooked foods to delivery vehicles.
- Fully responsible for the hygiene system maintained in the kitchen.
- Coordinate in menu planning and supervise cooks.
- Capable of supervising and cooking for 3000 persons at a time.
- Weekly 6 days work from shop opening to closing (10 am to 10 pm with 3 hours break; Saturday, Sunday, and public holidays work compulsory).
Requirements
- Minimum Secondary education.
- Minimum 5 years culinary experience.
- Able to cook South Indian and North Indian food items, including Tandoor, Prata, Snacks, Sweets, and beverages.
- Capable of producing Sambar, Rasam, Puligravy, Moorkulamabu, all types of Kootu, Poriyal, Piratal, Masial, Fried items, Pachati, and salad items.
- Must have experience in fast-paced vegetable cutting and cleaning operations.
- In case of emergency, capable of performing the duties of a Vegetable cutter or Dishwasher.
- Must have a strong healthy body to carry heavy utensils.
- Sound health to load/unload 25, 50, 100 kg containers of cooked foods to delivery vehicles.
- Good knowledge and experience in raw material and vegetable checking, wastage reduction techniques.
- Capable of leading the team to cook for 3000 persons at a time.
- Strong leadership skills and a good team player.
- Able to stand long hours in the kitchen.
- Able to make quick decisions and start preparation upon receiving bulk sudden orders for catering.
