About Us
Polly’s Brew Co. is a small, independent craft brewery in Mold, North Wales looking to expand our Brewhouse team. We began life with a dream and a vision as a two‑man operation brewing six times a month back in January 2018. Since then, we have continuously expanded our team, production output and even expanded premises across the yard here on Polly’s old farm. We require a full time (40 hours) senior brewer person to join our tight‑knit team of 13.
What you’ll be doing
- Support the Head Brewer across production
- Brew all styles to a high standard
- Plan tank rosters and support brew planning
- Support and help lead the production team
- Own the cellar with full responsibility for beer quality
- Wort production, fermentation, yeast management (incl. washing)
- Cellaring: dry hopping, centrifuging, transfers, tank management
- Routine analysis: gravity, pH, QC checks
- CIP and hygiene management
- Operate and support packaging (canning + kegging)
- Maintain equipment: centrifuges, canning lines, pressure vessels
- Troubleshoot and keep the brewery running efficiently
What we’re looking for
- Minimum 5 years’ commercial brewery experience
- Strong production brewing background
- Understanding of modern techniques
- Experience planning brews and tank schedules
- Experience supporting or leading a team
- Mechanically minded, able to maintain equipment
- Experience with canning lines, centrifuges, packaging
- Comfortable across full brew‑to‑package process
- Able to multitask and deliver high standards
- Strong cleanliness and hygiene standards
- Organised, proactive, takes ownership
Desirable (not essential)
- Brewing qualifications
- SALSA / EHO experience
- Forklift licence
