We are seeking a passionate and talented Chef de Partie to lead and develop our growing pizza and bakery programme. This is an ideal opportunity for a chef with a genuine love for dough, fermentation, bread-making, and Italian baking traditions, who is eager to contribute creatively to a high-quality and ambitious kitchen operation.
Responsibilities- Take ownership of the pizza and bakery section, ensuring consistency and excellence in every product.
- Prepare and manage dough production, fermentation schedules, shaping, baking, and quality control.
- Assist in developing seasonal pizza offerings, breads, focaccia, and other baked products in line with the Pollini philosophy.
- Maintain exceptional standards of food quality, presentation, and consistency.
- Support the Executive Chef and Senior Sous Chefs during service and daily operations.
- Ensure all food safety, hygiene, and health & safety regulations are met or exceeded.
- Monitor stock levels and assist with ordering ingredients and supplies for your section.
- Maintain a clean, organised, and efficient working environment.
- Work collaboratively with the wider kitchen team to deliver outstanding guest experiences.
- Minimum 12 years' experience as a Chef de Partie or Demi Chef de Partie in a quality restaurant, bakery, pizzeria, or similar environment.
- Strong knowledge of dough production, fermentation, bread-making, pizza preparation, and baking techniques.
- Passion for Italian cuisine, artisan baking, and working with high-quality ingredients.
- Excellent attention to detail and commitment to consistency.
- Ability to work calmly and efficiently under pressure.
- Strong organisational and communication skills.
- A positive attitude and willingness to support and develop alongside the team.
- Flexibility to work evenings, weekends, and events as required.
