Job Scope: Responsible for implementing standardized food safety policies, conducting audits, and ensuring compliance with regulatory requirements. Manage corrective actions for non-compliance, organize training programs, and maintain accurate records of food safety activities. Collaborate with department heads, monitor operational hygiene across all areas and liaise with suppliers to uphold quality standards.
Some of the key responsibilities:
- Assist in the overall implementation of standardized food safety policies and procedures to ensure compliance with applicable regulatory requirements.
- Assist in establishing auditing tools and reports for Key Food Safety Performance Indicators (KPIs).
- Review processes and procedures to upkeep with the requirement of food safety and compliance.
- Manage and drive corrective plan and measures in countering any non-compliance, nor not meeting the quality assurance guidelines.
- Regularly and periodically check all areas concerned, preparation, production, storage, supply, to report detailed information of shortcomings.
- Effectively maintain working relationships with all Department Heads, location Person-in-Charge, Management, and employees in ensuring Quality Assurance and compliance.
- Attend the weekly Operations meeting.
- Have a thorough knowledge and understanding of all food and beverage items offered.
- Ensure that all Food & Beverage, kitchens and all related employees, such as Purchasing, Store & Logistics have adequate knowledge of food safety.
- Regularly organize food safety meetings and training and keep accurate records of all training and meetings held and ensure training effectiveness by regular checking.
- Develop on-the-job and classroom training for all kitchen, service, and stewarding team, all related team members.
- Establish food safety committees for the Company, to be involved in auditing, correcting, and communicating all corrective measures to all operations units concerned.
- Ensure daily routine checks/audits are carried out at all various operational areas, with the committees, and related Department Head.
- Ensure daily checks of freezers and fridges in the kitchen and bar areas.
- Develop a monthly report of operational hygiene gaps and develop a corrective and preventive action plan.
- Prepare and compile all audit reports.
- Ensure that all data is recorded properly by the respective kitchen person in charge and filed correctly for future reference.
- Regularly check all food offering locations, preparation kitchen, production kitchen, store, and logistic pastry counters, buffets, and displays for the restaurants and banquets.
- Join site visitation to suppliers, current and/or potential.
- Contribute to sourcing new suppliers and ensure all suppliers are visited regularly to evaluate their production in terms of hygiene.
- Attend operations and outside catering setup to evaluate hygiene gaps.
- Attend any visit of the governmental body in terms of food hygiene.
- Spot check on receiving area for food hygiene and vendor product quality to ensure the Company's criteria is met.
- Be flexible to assist the operation when and as required during operational peaks or seasonal festivities.
About You: The ideal candidate will have the ability to work in a diversified, fast-paced and collaborative environment with excellent interpersonal and good time management skills:
- Candidate must possess at least Bachelor's Degree/Post-Graduate Diploma/Professional Degree in Others or equivalent.
- Required language(s): English
- At least 5 Year(s) of working experience in the related field is required for this position.
- Preferably Manager specialized in Food Safety / Hygiene / HACCP or equivalent.
- Dynamic candidate, self-starter, and good interpersonal skills are required.
- Shift duty is required.
