Set in the picturesque Surrey countryside, near Dorking, our client is a popular country house hotel. The hotel has a bustling C&B trade, catering for weddings, conferences and special events for up to 250 covers. The main restaurant is open for both breakfast and dinner, offering diners an array of mouthwatering modern British meals from their à la carte menu. Dishes are made using locally sourced produce. A typical Saturday evening can see the restaurant catering for 100 covers or more, whilst a separate all-day dining menu runs from the bar area, offering guests a selection of lighter meals and snacks. The afternoon tea trade here is becoming increasingly popular, with a selection of savoury and sweet treats offered. The hotel has good public transport links with a bus stop at the end of the driveway, too.

What’s involved?

As an experienced Chef de Partie, you will be able to run your section with confidence, delivering consistently outstanding dishes every service. You will prepare, cook and present food to the highest standards, ensuring every plate looks as good as it tastes and be one step ahead with excellent preparation and organisation, whilst also helping the kitchen to run like clockwork! A Chef de Partie will work closely with the Head Chef and wider brigade, communicating effectively to keep service smooth and efficient and getting involved in menu development – this is your opportunity to share fresh ideas and help to create exciting, seasonal dishes! You will keep your section spotless, maintaining exceptional standards of cleanliness, hygiene and food safety at all times. You’ll support stock control by monitoring ingredients, reducing waste and ensuring your section is always service-ready whilst sharing your knowledge and supporting the more junior chefs in the team to help them develop.

Please note that staff accommodation is not available with this role; therefore, applicants should only apply if they can commute to the Dorking area of Surrey daily.
