D3 Collective have just launched our second venue at the iconic Olympia London and we’re looking for an experienced, energetic Assistant Head Sommelier to help bring it to life. Located in the stunning Grade II* listed Pillar Hall, Idalia will serve guests from breakfast through to evening dining, with a menu focused on exceptional British produce. On select evenings, the space will come alive with soul and jazz, creating a vibrant and memorable guest experience. This is a rare opportunity to join a brand-new opening, shape the service culture, and grow with a fast-expanding business.
We are seeking a passionate and knowledgeable Assistant Head Sommelier to support the Head Sommelier in managing our wine program and delivering exceptional guest experiences. This role is ideal for a motivated wine professional looking to further develop their career in a high-end hospitality environment.

What We’re Looking For:
- 3 years+ proven experience as a Sommelier
- Strong knowledge of wines, regions, and service techniques
- Excellent communication and customer service skills
- WSET Level 2 or higher (preferred)
- Ability to work flexible hours, including evenings and weekends
- Passion for wine and hospitality excellence
Key Responsibilities:
- Support the Head Sommelier in overseeing the wine list and cellar management
- Assist guests with wine recommendations and food pairings
- Ensure consistent, high‑quality wine service across all shifts
- Assist with staff wine training and knowledge development
- Help manage inventory, ordering, stock rotation, and cost control
- Maintain proper storage, handling, and service standards
- Stay informed on wine trends, producers, and new selections
