Company information: My client is a national contractor that provides catering services into the Business & Industry sector, education, healthcare and leisure. They are a British business that operates heavily in the UK and has achieved consistent growth year after year by keeping core values and a passion for hospitality.
An opportunity has arisen for a Senior Sous Chef to join their catering team based at one of their Financial corporate head offices in the City of London with 1000 people on site. The catering offer consists of an extensive breakfast and lunch offer for the staff and day-to-day hospitality and events such as finger food, bowl food and canapés. There are very limited fine dining lunches or dinners (approx. 2-3 a year). There are no compromises on the quality of the produce and ingredients, allowing the kitchen to provide an extensive daily changing menu, concepts and cuisines ranging from a bistro station, a wide range of healthy salad stations with various condiments and proteins, grazing counter, street food concept counter, themed days, and dishes from around the world. The breakfast service mirrors this and offers a porridge station/counter, a large hot breakfast section offering 3 different types of sausages and bacon, 5 different styles of eggs, congee, waffles and much more. The menus are constantly evolving and require the chefs to keep innovative and creative.
Duties as Senior Sous Chef:
- You will be responsible for supporting the head chef with the day-to-day running and management of the back of house/kitchen operations.
- Managing, leading, mentoring and developing your team.
- As second in command of a kitchen brigade of 20, you will be required to manage the kitchen operation and liaise with front of house in the head chef's absence.
- This is a kitchen-based role and will require you to cook and manage the kitchen operations including H&S, allergens, ordering and inputting dishes onto the menu.
The ideal Senior Sous Chef will have previous experience and knowledge of various cuisines and styles of cooking, catered for 1000 covers plus and have a real passion for food.
