Position Overview: Full‑time Permanent Contract at PGL. Salary: £35,034 per annum (live‑off rate). Accommodation and meal packages are optional, available at a generous rate with zero charge for bills or utilities.

Key Responsibilities:

  • Lead a team of Chefs and Catering Assistants: organise rotas, set clear objectives, identify training needs.
  • Ensure high standards of food hygiene, manage complex dietary requirements, and maintain safety, allergen and food‐safety compliance.
  • Oversee financial aspects of the catering operation, including production planning, waste reduction and stock management.
  • Collaborate with the catering team to execute proven menus and provide delicious, nutritious meals.
  • Manage working hours, including limited late nights and an off schedule for Fridays or Saturdays, and no work over Christmas.

Qualifications:

  • Experience as a Sous Chef or Head Chef in a mid‑to‑large scale dining environment.
  • Proven ability in food mass production.
  • A confident leader with strong organisational and decision‑making skills.
  • Excellent knowledge of food hygiene and handling of complex dietary requirements, including allergies and intolerances.
  • Holder of City & Guilds 7061/2 (or equivalent) and Level 3 or above in Food Safety and Allergen Management.
