We are looking for an experienced Sous Chef to join the team at Michelin-starred Petrus, part of Gordon Ramsay Restaurants. Petrus by Gordon Ramsay is an elegant fine dining restaurant which has retained a Michelin star since 2011. Serving modern French cuisine, the restaurant benefits from a magnificent state of the art cylindrical wine vault constructed from glass in the middle of the restaurant, creating a fantastic ambience for both our guests and the team.
As Sous Chef you will:
- Assist the Head Chef manage the day to day operation of the kitchen whilst supervising and developing the brigade.
- Ensure the highest standards of food preparation and delivery, as well as effective communication across all sections of the kitchen.
- Assist the Head Chef in menu development and creation ensuring seasonality of ingredients.
- Assist the Head Chef in ensuring targets are met in relation to payroll and food costs and the brigade comply with all health & safety and food safety policies and procedures.
The ideal candidate will:
- Have previous experience working as a Sous Chef in a Rosette or Michelin Star Restaurant.
- Be passionate about delivering high quality, seasonal dishes.
- Be able to effectively manage, motivate and lead a team.
- Have the ability to develop a team enhancing the skill level of the brigade.
- Be a clear communicator and enjoy being part of a team.
