Paul Rhodes Bakery is a supplier of quality handcrafted sourdoughs, cakes and pastries in London. We operate a wholesale business supplying some of London’s top restaurants, hotels, cafés, and entertainment venues, as well as a local retail bakery shop based in Greenwich Market. We are currently looking for a passionate Assistant Head Baker to join our team on a permanent basis. We want our bakery to be the very best, and you and your role will be an integral part of this journey. Responsibilities:

  • The Assistant Head Baker works closely with the Head Baker to ensure the smooth running of bakery production.
  • This role maintains strong communication with the purchasing team, food safety officers, and other departments to support efficiency and quality standards.
  • The role also develops and maintains effective relationships with suppliers, delivery teams, and external maintenance contractors.
  • The key focus of this role is to support and oversee the day-to-day operations of the bakery, ensuring high standards in product quality, production efficiency, hygiene, and team performance.
  • The Assistant Head Baker helps lead a team of bakers and assistants, supports training and development, monitors stock levels, enforces food safety compliance, and assists in implementing process improvements.
  • This is a hands-on role requiring strong leadership, attention to detail, organisation, and communication skills.

Location: Paul Rhodes Bakery, SE10 9PJ (Greenwich, London)

Requirements:

  • Minimum 2+ years’ experience in a leadership role within a bakery environment.
  • Proven experience as a Baker with specific experience in operating and managing ovens (minimum 2 years).
  • Ability to support and lead the bakery team in the absence of the Head Baker.
  • Strong understanding of bakery production processes, food safety, and quality standards.
  • Excellent communication, organisation, and team management skills.
