Overview
The post holder will report directly to the Site Operations Manager.
The primary objective of the Chef/Cook is to prepare and cook meals for customers and clients using the centre, ensuring high‑quality, nutritionally balanced food that exceeds guest expectations while meeting menu costs and financial constraints.
The role is responsible for all aspects of day‑to‑day catering, including menu planning, food safety, stock control, ordering, cleaning, and achieving a 5‑out‑of‑5 Doors grading score.
The Cook/Chef will manage catering operations to maximise business opportunities and profitability in line with the business plan.
Responsibilities
- Prepare and cook food for customers, visitors, and particularly school groups, delivering wholesome homemade meals from scratch.
- Regularly review menus to ensure quality, nutritional value, and minimise wastage.
- Purchase from company‑approved suppliers and a nominated buying list, using forward planning and batch cooking when appropriate.
- Plan and deliver menus considering seasonality of food, and ensuring adherence to HACCP procedures and legislative responsibilities.
- Provide training to catering staff to meet regulatory requirements and assist them in completing their duties.
- Maintain and develop effective stock‑control systems to minimise wastage and support profitability.
- Deliver consistent, high‑level customer service and ensure staff conduct aligns with licensing regulations.
- Assist in managing the centre's quality assurance systems and procedures.
- Perform maintenance, housekeeping, and cleaning duties as required.
- Complete any regulatory or additional duties assigned by the Outdoor Centre Manager to achieve contract business objectives.
- Adapt to additional hours and duties that may arise on short notice, including unsocial hours for breakfast and evening meals.
Qualifications
- Preferably hold a recognised qualification in catering or be working towards one; a qualification in a related subject is acceptable.
- Hold Food and Hygiene Certification.
- Demonstrate recent experience in a cook/chef role, preferably in an environment serving a wide range of menu items and cooking from scratch.
- Show ability to cost menu items and food portions.
- Demonstrate detailed knowledge of HACCP and food safety legislation.
- Possess a current driving licence and have reliable access to a car (Dolygaer is not on public transport routes).
