Overview of the Main Role: The commis chef will support the head chef in delivering food of a first-class quality, whilst maintaining food standards and wastage. Parkstone Golf Club proudly sits within the top 100 courses in Great Britain & Ireland and makes every effort to deliver an equally outstanding experience in hospitality. The candidate requires level 3 food health certification. If it has not yet been achieved, Parkstone will fund the training.

Duties & Responsibilities:

  • It is important to stress the main bulk of the cooking is short order day menu. However, there is a requirement to cook main meals, therefore some banqueting experience is preferred.
  • The second chef will assist in maintaining order and organisation in the kitchen, controlling costs and wastage.
  • Delivery of food service:
  • Ensure all food is served to specification.
  • Ensure all company recipes and preparation requirements are met.
  • Ensure temperature, seasoning and flavour are to specification.
  • Ensures readiness for service and the pace is set for peak trade.
  • Ensure that the storage of food meets company and statutory health and safety requirements.
  • Deal with any customer returned food in a timely manner.
  • Delivers company standards.
  • Deliver the company kitchen standards as identified on kitchen audit.
  • Implement and ensure the company health and safety policy is met at all times – this includes the training of all kitchen staff.
  • Comply and implement all health and safety, and food hygiene requirements. Must have food hygiene handlers certificate (if not current we can arrange to send on a refresher course).
  • Ensure temperature records and food labelling are maintained and up to date.
  • Ensure the kitchen is clean and hygienic, making sure cleaning rotas are adhered to and records kept.
  • Ensure the kitchen uniform and personal hygiene requirements are adhered to.
  • Ensure the kitchen runs smoothly on a daily basis and is adequately stocked with all necessary goods.
  • Promote a positive perception of the company at all times internally and externally.
  • Attend meetings as requested.

Hours of work: Full time - 40 hours per week. Flexible rota system. Workdays will include.
