WHAT WILL YOU BE DOING

The Breakfast Junior Sous Chef is responsible for supporting the daily breakfast kitchen operation, ensuring high-quality food preparation, presentation, and service standards are consistently delivered. The role also supports staff food preparation, event preparation, restaurant mise en place, stock ordering, and maintaining agreed par levels. Working closely with the senior kitchen team, the Junior Sous Chef helps maintain food safety standards, kitchen organisation, and efficient day-to-day operations while supporting and guiding junior team members.

Your tasks will include, but will not be limited to:

  • Support the daily operation of the breakfast kitchen service.
  • Prepare, cook, and present high-quality breakfast dishes in line with company standards.
  • Ensure breakfast buffet and à la carte items are consistently replenished and presented.
  • Maintain cleanliness, organisation, and food safety standards throughout service.
  • Assist with breakfast menu development and ad-hoc changes.
  • Support the preparation and service of staff meals when required.
  • Assist with event and banqueting food preparation as directed by senior chefs.
  • Support restaurant lunch and dinner mise en place and preparation during quieter breakfast periods.
  • Work collaboratively across all kitchen sections to ensure operational efficiency.
  • Assist with food ordering and stock management.
  • Maintain accurate par levels for breakfast and assigned kitchen sections.
  • Monitor stock rotation and ensure all products are stored correctly following FIFO procedures.
  • Minimise waste and support cost-control initiatives.
  • Supervise, train and support junior kitchen Team Members.
  • Ensure effective communication between kitchen and front-of-house teams.
  • Take ownership of any guest complaints relating to breakfast food items, ensuring concerns are handled professionally, promptly, and effectively to achieve guest satisfaction and maintain service standards.
  • Maintain full compliance with food hygiene, HACCP, and health & safety regulations.
  • Ensure all equipment is used safely and maintained correctly.
