Junior Sous Chef at Padella Production Kitchen. Padella was London’s pioneering fresh pasta concept when it opened in Borough Market in 2016, focusing on high quality, seasonal recipes and techniques developed at Tim & Jordan’s first restaurant, Trullo, and at St John, The River Cafe and Moro, where they trained. We’re still leading the field in our love for traditional Italian pasta; the kind you eat in people’s homes and in the best trattorias in Italy, while using a combination of the best quality and high welfare Italian and British seasonal ingredients.
Our training reflects the fact that we roll and shape our pasta every day, so Padella production chefs develop a high level of skill in working with fresh pasta, with each dish worked in the pan, one pan at a time, to get the perfect mantecatura. The Production Junior Sous Chef is responsible for motivating and encouraging our busy production kitchen team, and contributing to our friendly and supportive environment. Product knowledge and staff welfare are our priorities at Padella, so Intermediate and Advanced level WSET Training are both included for the Production Junior Sous Chef position, as well as comprehensive Financial and HR training to help you move forward in your career.
