Our Central Production Unit on Holloway Road is the team that keeps every Ottolenghi venue running smoothly. Working behind the scenes, the CPU supports our restaurants and delis across the group — ensuring everything is in place so our teams can do what they do best. It's a hands-on, people-first environment, and some roles may involve travel to our sites. We are now looking for a talented Bakery Production Supervisor to join our team.
What you’ll do
- Oversee the daily production of the Packed Product section, ensuring production is completed accurately and on time.
- Supervise the preparation and baking of a range of bakery products, ensuring recipes, methods and production standards are consistently followed.
- Maintain high standards of quality, taste, texture, appearance and consistency across all finished products.
- Carry out regular quality checks on ingredients and finished products, identifying and addressing any issues promptly.
- Lead, support and develop junior bakers and other members of the bakery team, creating a positive and collaborative working environment.
- Delegate tasks effectively and monitor progress throughout the shift to ensure productivity and smooth workflow.
- Support the training and development of junior bakers, including labelling requirements, food standards and correct production procedures.
- Assist with monitoring stock levels and ensuring ingredients and supplies are available when required.
- Support effective stock rotation and help minimise food waste and unnecessary costs.
- Ensure the bakery operates in line with food safety, health and safety and hygiene standards at all times.
- Maintain a clean, organised and safe working environment.
- Carry out regular checks of bakery equipment and report any maintenance or operational issues.
- Support staff scheduling and effective deployment of the team according to production requirements.
- Maintain accurate production, inventory and waste records.
- Work closely with the wider bakery and CPU management team to identify opportunities to improve efficiency, quality and ways of working.
- Lead by example, remaining hands-on and supporting the team during busy periods.
What we’re looking for
- 3+ years’ professional baking experience, with at least 1 year in a supervisory or leadership role.
- Strong knowledge of professional baking techniques, ingredients and production processes.
- Experience working in a busy, high-volume bakery or food production environment.
- A strong understanding of quality standards and the importance of consistency in bakery production.
- Experience supervising, training or mentoring other team members.
- Good understanding of food safety, hygiene and health & safety requirements.
- Excellent organisation and time-management skills, with the ability to prioritise effectively.
- Strong communication skills and the ability to work collaboratively with different teams.
- A proactive approach to problem-solving, with the ability to remain calm and effective under pressure.
- Someone who takes pride in their work and has a genuine passion for producing high-quality food.
- A supportive and inclusive leadership style, with a genuine interest in helping others develop.
Working hours
- Full-time position within a 7-day operating schedule.
- Flexibility is required, including early mornings, weekends and holidays.
- The role is based in a busy production environment and involves being on your feet for extended periods.2
