The main role of the Junior Sous Chef is to organize kitchen operations and prepare and serve a range of dishes, whilst supervising junior members of the Kitchen Brigade and promote the desired work culture.

In this role, you will help lead and develop the team and deputize for the Head Chef and Sous Chef in their absence.

About the role

  • Supervise and assist with the preparation and presentation of all menu dishes on the hotel menu as appropriate with location and guest mix, prior, during and after service or as requested by your manager.
  • Assist in the preparation of buffet food
  • Monitor standards of production daily to ensure quality.
  • Assist in the training of all kitchen staff, motivating all staff to increase skills in food preparation and kitchen management. Ensure all training is accurately recorded.
  • Ensure COSHH and HACCAP guidelines are achieved and maintained in the department.
  • Control Supplies and minimize wastage
  • Have an understanding and awareness of all policies and procedures relating to Health, hygiene and Fire life Safety.

Ensure these are in place and understood by all the team.

  • Communicate any difficulties, guest or internal customer comments and other relevant information to your head of department or duty manager.
  • Attend and participate in daily briefings and other meetings as scheduled.
  • Prepare in advance food, material and equipment needed for the service.
  • Clean and re-sets working area.
  • In the absence of the Head Chef / Sous Chef conduct shift briefings to ensure hotel activities and operational requirements are known
  • Assist your manager in the overall running of the department as required.
  • Complete any reasonable request by a member of the Management team.
