Location: Rockliffe Hall, Darlington

Salary: £28,000 to £30,451 per annum

Hours: Fulltime - 40 hours per week, including weekends

Reporting to: Head Chef and Sous Chef

Responsible for: Commis Chef and Kitchen Porter

Job Purpose: We are looking for a Chef de Partie to join the Chef Team, to ensure all food is cooked and presented to a high-quality standard and that your allocated section operates in a safe, hygienic and efficient manner. To lead and control the kitchen in the absence of the Sous Chef.

Key responsibilities of the Chef de Partie:

  • Understand the gross profit targets within the kitchen and aim to achieve them through portion and wastage control.
  • Monitor the quality of goods delivered and ensure correct stock rotation is adhered to.
  • Be able to work as a team member and communicate effectively at all levels.
  • Willingly attend job chats with senior team members.
  • Participate willingly in organised training sessions within the hotel and own department.
  • Display a positive “can do attitude” to Senior Chefs and the Front of House team.
  • Be flexible and adaptable, being prepared to work in another of the resort’s kitchens when business demands.
  • Train, coach and aid the development of junior chefs within the kitchen.
  • Monitor the quality and presentation of all food served to ensure that it is up to the Rockliffe standard.
  • Exceed customer expectations by responding positively to special requests and specific dietary requirements.
  • Plan and place orders to selected food suppliers on a daily and weekly basis to ensure stock availability.
  • Follow prepared job lists from the previous shift.
  • Check all fridges to ensure they are stocked with the necessary ingredients in preparation for service and highlight any stock shortages to a senior chef.
  • Be able to meet deadlines and work calmly under pressure, to willingly undertake any tasks when requested by a senior member of the team.
  • Be creative to help with suggestions on new menus and dish ideas.
