About Melodys Munch
Melodys Munch is an Authentic Caribbean Street Food concept bringing bold Caribbean flavours to Brixton. We are expanding our operation with a new kitchen at the Prince of Wales, Brixton , offering Caribbean takeaway and delivery alongside a dedicated eat-in collaboration menu and our new Caribbean Sunday Roast .
Your responsibilities
- Preparing authentic Caribbean dishes consistently
- Preparing and seasoning meats correctly
- Cooking curry goat and other slow-cooked dishes
- Preparing rice & peas and plain rice to a consistent standard
- Preparing jerk chicken Caribbean sauces, marinades and accompaniments
- Batch cooking and preparation ahead of service
- Portion control
- Maintaining recipe consistency
- Plating dine-in dishes to a high standard
- Preparing takeaway and delivery orders
- Stock rotation and reducing food waste
- Maintaining excellent kitchen cleanliness
- Following food safety and allergen procedures
- Working alongside the Breakfast/Pub Chef, KP and FOH team
Who we're looking for
This role requires genuine professional Caribbean cooking experience . We want somebody who understands the food rather than simply being able to follow a generic recipe.
You should:
- Have experience working in a professional commercial kitchen
- Have strong knowledge of Caribbean/Jamaican cooking
- Be confident preparing curry goat, jerk chicken and rice & peas
- Understand Caribbean seasoning, marinades and flavour profiles
- Be comfortable with batch cooking
- Work cleanly and efficiently
- Understand portion control and consistency
- Be able to plate food professionally for dine-in customers
- Work well under pressureUnderstand food hygiene, allergens and kitchen safety
- Be reliable and punctual
- Have the right to work in the UK
- Professional chef qualifications are welcomed, but demonstrable Caribbean cooking ability and commercial-kitchen experience are extremely important for this position.
Hours
This will be a daytime/evening operation with shifts arranged around preparation and service. The Caribbean kitchen will operate alongside our pub menu during the week, with Sunday becoming an important Caribbean Roast service . Exact hours and rota will be discussed with shortlisted applicants.
Practical trial
Shortlisted candidates will be invited to a paid kitchen trial . We may ask candidates to demonstrate preparation of several core Caribbean dishes so we can assess flavour, organisation, cleanliness, consistency and ability to work within a commercial kitchen.
