Objective:
To oversee all Culinary operations across the hotel (Kitchens, Heart of House and Employee Brasserie) and ensure that they consistently meet the needs and expectations of our guests and employees. Updating and creating new initiatives where required. To be responsible for developing, implementing and maintaining all standards, policies and procedures relating to Culinary and Stewarding at One Aldwych with a focus on finding ways to continue to elevate our guest’s and employees experience, guest engagement and satisfaction. High level presence in the operation is expected, engaging with our team and working alongside them is a priority.
Your Responsibilities:
- Being fully responsible for efficiently managing the smooth running of the kitchen operation and team
- Facilitate all aspects relating to the day to day running of operation for Kitchens, Heart of House and Employee Brasserie.
- Prepare all kitchen budgets in line with forecasted covers and departmental expenses (e.g., payroll, P&L, Capex).
- Control and analyse departmental costs on an ongoing basis to ensure performance against budget
- To ensure all menu food items are properly prepared using correct recipes, methods of preparation and presentation.
- Update and create food menus on a consistent basis in line with concepts for the outlets and employee brasserie
- Instruct and train chefs with use of menu recipe and method of preparation files.
- Collate and place food purchase
- Interact effectively and work closely with the Food and Beverage Operations Manager and Heads of Departments in all areas to ensure that service standards are consistently exceeded, and good working relationships maintained.
- Maintain all internal communication with other departments to ensure a seamless experience for our guests.
- Liaise with the Food and Beverage Manager and Heads of Department on a daily basis to discuss the progress of the day to day business and to analyse any guest comments regarding food quality, presentation and overall guest experience.
- Participate in the planning and development of any events or new initiatives for Food and Beverage at One Aldwych and collaborate with our Marketing and PR teams to promote to enhance the brand.
- To conduct daily briefings (de-briefings where necessary) with the Culinary and Front of House teams, ensuring all relevant information is passed along and teams are prepared for service, to include SRG’s, guest preferences and any special requirements, etc.
