About The Role

Our award‑winning Food and Beverage team is at the hub of our business, and we have an exciting opportunity for an experienced supervisor to join our Swilcan Loft Restaurant.

Swilcan Loft is a 74‑cover restaurant with floor‑to‑ceiling windows and an outdoor terrace overlooking the 17th hole of the Old Course and one of golf’s most famous landmarks, Swilcan Bridge.

The successful candidate will support our Food and Beverage Management Team.

This role is responsible for coordinating activities during service and providing assistance to the team, helping deliver our established service standards to create magical memories for our guests.

Responsibilities

  • Deliver exceptional customer service to all guests in line with AA 5‑star standards.
  • Greet customers, process orders by telephone and ensure all orders are delivered following IQA standards.
  • Ensure the cleanliness of the outlet and still room areas before, during and after service and that they are in accordance with the hotel’s standards of practice.
  • Maintain guest history and ensure this information is passed on to all team members where necessary.
  • Have a full understanding of the composition of all dishes on the menu, as per specifications.
  • Ensure stock and linen levels always meet business requirements – highlighting any concerns where appropriate.
  • Support and coach associates to promote and maintain a high level of guest service in line with IQA, Visit Scotland, AA and other standards.
  • Attend regular departmental training sessions, pre‑service meetings and operational meetings.
  • Be conversant with the hotel’s health and safety procedures, accident reporting procedures, safety rules, first aid arrangements, how to report unsafe conditions, licensing law, fire equipment, evacuation procedures, protective clothing, sickness and disciplinary procedures.

Qualifications

  • Previous experience as a Bar or Restaurant Supervisor or in a similar role.
  • Strong leadership and team management skills.
  • Excellent knowledge of beverages and bar operations.
  • Ability to work in a fast‑paced environment.
  • Exceptional customer service and communication skills.
  • WSET level 1 (preferred).

  • £29,176.19 per annum + TRONC (Subject to increase in March 2026)
