About The Role

Our award‑winning kitchen team has an exciting new opportunity for a Senior Chef de Partie to join the pastry team on a permanent full‑time basis.

Responsibilities

  • Manage and oversee food production as directed by the Senior Team and present it at the required times.
  • Assist the Pastry Sous Chef in the planning, preparation and execution of new menus and ideas.
  • Ensure that Chef de Parties, Commis Chefs and Demi Chefs work to standard; supervise, guide and motivate them.
  • Maintain communication between Senior Team and Chef de Parties, ensuring special messages and requests are dealt with promptly.
  • Maintain the kitchen recipe manual and SOPs; manage production, quality and consistency through their use.
  • Assist the Pastry Sous Chef in ordering food purchases and stock control, ensuring stock levels match business needs.
  • Assist the Pastry Sous Chef with hiring the back‑of‑house staff in line with company policy.
  • Maintain discipline fairly and consistently, including time‑keeping.
  • Ensure the smooth running of the kitchen in the absence of the Sous Chef.
  • Provide own basic set of equipment, including knives, pallet knives and mini scales.
  • Understand menus and operating procedures, running your section accordingly.
  • Ensure all HACCP systems are followed and due diligence is completed daily.
  • Be fully conversant with departmental LQA standards.

Qualifications

  • Previous similar experience as a Senior Chef de Partie or Chef de Partie.
  • Strong knowledge and skills in plated desserts, chocolate work and patisserie.
  • Creativity and passion for modern pastry trends and techniques.
  • Culinary education preferred but not essential.
  • Solid knowledge of culinary terminology and techniques.
  • SVQ 1 & 2, an MVQ or equivalent qualification.
  • Strong staff training and development experience.
  • Knowledge of menu composition.
  • Extensive knowledge of food handling and sanitation standards.

Hours

Permanent, Full-time, 40 hours per week, 5 days out of 7.

Salary

ÂŁ32,213.96 per annum.
