About the Role

Our award‑winning kitchen team has an exciting new opportunity for a Senior Chef de Partie – Nights to join us on a permanent full‑time basis working in the Main Kitchen. You will prepare a variety of refined and beautifully presented offerings, all crafted with the finest sourced Scottish produce, and be responsible for your own section while gaining invaluable guidance and development within a multi‑outlet hotel kitchen.

Responsibilities

  • Prepare all foods necessary for service to the demonstrated culinary standards and to the quantities according to the forecast.
  • Maintain the established pace of service while preparing all foods.
  • Prepare all dietary requirements in foods requested as part of our customer focus directives.
  • Ensure that foods are prepared and stored so they do not fall in the temperature danger zone.
  • Sanitise all cutting boards and utensils after fabricating any raw meat, fish or poultry products.
  • Maintain knife safety standards as viewed in the safety video during culinary department orientation.
  • Have a working knowledge of all equipment within your job duties and know how to assemble, disassemble and clean this equipment.
  • Work independently to service guests during the night in a 24‑hour kitchen.
  • Set up breakfast MEP for the breakfast service team.

Qualifications & Experience

  • Solid knowledge of culinary terminology and techniques; competent in cooking meat, fish and poultry, and the preparation of vegetables, basic stocks, soups and sauces.
  • Ability to demonstrate competence and skills within the kitchen and enjoy working as part of a team.
  • SVQ 1 & 2, an MVQ or equivalent.
  • Ability to work all stations of the kitchen.
  • Minimum of 2 years of previous culinary experience.

Hours

Permanent full‑time – 21:30 hrs to 06:00 hrs.

Salary

ÂŁ32,213.96 + TRONC.
