Our award‑winning kitchen team has an exciting new opportunity for a Junior Sous Chef to join our Pastry department on a permanent full‑time basis. You will create exquisite dishes using locally sourced Scottish produce, oversee your own section and receive invaluable guidance and development within a multi‑outlet hotel kitchen. In this role you will assist the Pastry Sous Chef in the preparation and service of food, ensuring that the highest standards are maintained at all times and that kitchen areas, equipment and utensils are kept clean and tidy to the Old Course Hotel standards.
Responsibilities- Manage and oversee food production as directed by the Senior Team and present it at the required times.
- Assist the Pastry Sous Chef in planning, preparing and executing new menus and ideas.
- Supervise, guide and motivate the Chef de Parties, Commis Chefs and Demi Chefs to standard.
- Maintain high levels of communication with the Senior Team and Chef de Parties, ensuring special messages and requests are dealt with promptly.
- Assist in ordering food purchases and stock control, ensuring stock levels are in line with business levels.
- Maintain discipline in a fair and consistent manner, including timekeeping.
- Own the basic set of equipment including knives, pallet knives, mini scales, etc.
- Understand the menus and operating procedure of the kitchen and run your section accordingly.
- Follow HACCAP systems and complete day‑to‑day due diligence by you and the team.
- Be fully conversant with your departmental LQA standards.
- Similar experience in a 5‑star establishment.
- The desire to move into a management position with increased responsibilities.
- Solid knowledge of culinary terminology and techniques.
- SVQ 1 & 2 or an MVQ or equivalent qualification.
- Intermediate Health and Safety knowledge (desirable).
Hours: Full time, 40 hours per week
Remuneration: £34,200 per annum
