About the Role
Our award-winning kitchen team has an exciting new opportunity for Senior Chef de Parties, Nights to join us on a permanent basis working in the Main Kitchen. You will prepare a variety of refined and beautifully presented offerings, all crafted with the finest sourced Scottish produce and be responsible for your own section while gaining invaluable guidance and development within a multi‑outlet hotel kitchen. This is an opportunity to showcase your skills in a fast‑paced luxury environment. In this role you will exceed the food quality expectations of the Old Course Hotel guests while being responsible for the daily successful operation of the night menu.
Responsibilities
- Prepare all foods necessary for service to the demonstrated culinary standards and to the quantities according to the forecast.
- Maintain the established pace of service.
- Prepare all dietary requirements as requested by our customer focus directives.
- Ensure that foods prepared do not fall in the temperature danger zone during storage, preparation, or service.
- Sanitise all cutting boards and utensils after fabricating any raw meat, fish or poultry products.
- Maintain knife safety standards as viewed in the safety video during culinary department orientation.
- Have a working knowledge of all equipment that is within your job duties and know how to assemble, disassemble and clean it.
- Work independently to service guests during the night in a 24‑hour kitchen.
- Set up breakfast MEP for the breakfast service team.
Qualifications
A solid knowledge of culinary terminology and techniques, with competence in meat, fish, poultry cooking, and the preparation of vegetables, basic stocks, soups, and sauces. The ability to demonstrate competencies and skills within the kitchen and enjoy working as part of a team. SVQ 1 £16.83 per hour.
