We’re looking for a skilled and experienced fish filleter to join our team at our fish shop in Crieff. This is a skilled, hands-on role that sits at the very heart of what we do — preparing the finest quality fresh fish and seafood for our customers.

What you’ll be doing:
- Filleting, skinning, pin-boning and portioning a wide range of fresh fish
- Shucking oysters and scallops to order
- Peeling and deveining prawns and langoustines
- Scaling and preparing whole fish for display and sale
- Maintaining the highest standards of hygiene and food safety at all times
- Supporting the shop team during busy periods as required
What we’re looking for:
- Proven experience as a fish filleter, fishmonger or in a seafood processing role
- Fast, accurate knife skills with an eye for quality and presentation
- A solid understanding of food hygiene requirements
- Ability to work efficiently in a fast-paced, chilled environment
- A team player with a positive attitude
- Food hygiene certificate desirable — training can be provided
