The result is a design‑led four‑star hotel with a sense of space and style. Chargrill Restaurant is the beating heart of Marmalade, serving bold, flavour‑driven dishes centred on prime cuts of Scottish meat, grilled to order, and side dishes of fresh locally sourced ingredients, matched to modern Scottish cooking techniques, while the hotel bar offers relaxed cocktails and local spirits.

Key Responsibilities

  • Welcome and seat guests, ensuring they feel comfortable and cared for from the start.
  • Take accurate orders and serve food with warmth, professionalism, and efficiency.
  • Confidently promote and upsell menu items, including daily specials, desserts, and drinks.
  • Share knowledge and passion for food and wine, including recommending pairings to enhance guest experiences.
  • Prepare and serve alcoholic and non‑alcoholic beverages in line with hotel standards and licensing regulations.
  • Support smooth-running service by coordinating with the kitchen and ensuring timely delivery of dishes.
  • Maintain immaculate restaurant presentation, ensuring tables, cutlery, and service areas are always guest‑ready.
  • Handle guest requests and feedback with confidence and care.
  • Uphold all health, safety, and food hygiene standards.

  • Housing allowance: £1.00 per hour for those not requiring subsidised staff accommodation.
