Key Responsibilities
- Prepare and cook a variety of grilled meats, seafood, poultry, and vegetables to the highest standards.
- Ensure all dishes are prepared and presented in accordance with the hotel's recipes, specifications, and presentation standards.
- Maintain consistency in food quality, taste, and portion control throughout every service.
- Prepare ingredients, marinades, sauces, and mise en place before each shift.
- Monitor cooking temperatures to ensure food safety and the correct level of doneness.
- Maintain a clean, organised, and hygienic grill station in accordance with HACCP and food safety regulations.
- Check the quality and freshness of ingredients and report any issues to the Sous Chef or Head Chef.
- Assist with stock rotation, inventory control, and minimising food waste.
- Follow all health and safety procedures while maintaining the highest standards of kitchen cleanliness.
- Work efficiently under pressure during busy service periods.
- Collaborate with the wider kitchen brigade to ensure smooth and timely food service.
- Support and assist with the training of junior chefs and kitchen assistants where required.
- Report any equipment faults or maintenance issues promptly.
- Contribute ideas for menu development and seasonal specials.
Skills & Experience
- Previous experience as a Grill Chef, Chef de Partie, or similar role within a 4-star or 5-star hotel, fine dining restaurant, or high-quality hospitality venue.
- Excellent grilling and cooking skills with strong attention to detail.
- Sound knowledge of food hygiene, HACCP, and health and safety standards.
- Ability to work calmly and efficiently in a fast-paced kitchen environment.
- Strong organisational and time management skills.
- Excellent communication and teamwork skills.
- Ability to work independently with minimal supervision.
- Flexible, reliable, and committed to maintaining the highest culinary standards.
